The only thing better than edamame hummus (in my opinion) is spicy edamame hummus. While not as creamy as this avocado and chickpea version, this Spicy Edamame Hummus has it’s own merits….

You all know how I feel about vegan coconut bacon. And the 3+ batches of creamy avocado hummus I’ve devoured in the last couple of weeks. And using naan in “naantraditional” ways. <– Ha, see what I did there?

I’m pretty sure coconut bacon has been making its way around the world wide web for a few years now, but I’m still not over it. And this maple mesquite version has gotten me all kinds of excited all over again.
These salty, smoky little niblets make the perfect meatless substitute for bacon. I’m not saying it’s a perfect replica, but I am saying it’s a surprisingly delicious stand in next time you want some sweet and smoky bacon sprinkled on your salad, tucked into a sandwich, or scrambled into your eggs….
I get that there are lots of different ideas about the texture of hummus out there and I wish I could say I’ve tried them all (because I love hummus THAT MUCH). And while I respect probably about 90% of those ideas about what hummus should feel like, I have a thing for the perfectly smooth kind with no hint of graininess. No chunks. I didn’t. I returned from the flu.
When I get sick, my emotional stability regresses back to that of a two year old. If I’m not averaging a 7 or better on the happy feelings scale, chances are I’m crying. Ugly crying with a lot of words that don’t make sense to anyone, least of all my spouse who, by default, becomes the target of all my emotions.
So really, it’s just better for everyone if I’m asleep the entire time I’m sick. Which is pretty much where I’ve been for the past 5 days. Asleep in the couch, cuddling with Trudydog. But only after an irrational and tear-filled (exclusively on my part) conversation with Mr. Peach wherein he was finally able to convince me that I couldn’t transmit flu germs to the dog.
I was very concerned with her well-being.
And now that I’m done embarrassing myself on the world wide web, I would like to introduce my new best (condiment) friend: gochujang….
But given that I gave up desserts exactly 3 weeks ago yesterday, I’m refocusing on other things I love to eat. Like curry. This curry, to be specific….
One of the many upsides to living in Eugene, Oregon is the ample brewery options. Ninkasi, Oakshire, and Hop Valley, for example, are all within about a half mile radius. And while I do enjoy the beers, I will admit that most of my excitement about the brews in this town comes from the truly wonderful observation that where there are breweries, there are food trucks….
Is it just me, or have you noticed that artisan peanut butter seems to be making its way onto grocery store shelves? A few months ago, we picked up a jar of this merry concoction – Chocolate Coconut Peanut Butter. As someone who is generally, and quite literally, the very opposite of trendy, I really think I’ve got my finger on the pulse this time. My prediction? “Artisan” peanut butter is trending and may very well make its way into all of our lives in 2016….
Taking a mediterranean-inspired chopped salad to the next level is the raison d’être for these Crispy Italian Roasted Chickpeas, which is why I’ve opted to name them so. Fair warning — I can’t confirm that there’s anything authentically Italian about this recipe.
I can confirm, however, that they are a crispy, crunchy, and flavorful snack to enjoy either on their own or atop the aforementioned salad (to be shared soon)….
